Cookies, Anyone?
I just made the best cookies I think I've ever made. I just put in a pinch of this, a pinch of that....and voila! they were perfection. Thought I'd jot down the recipe I used just in case you get a hankerin'. Cause I always have a hankerin' for cookies.
Hankerin' Cookies
2 cubes butter, softened
1 3/4 packed brown sugar
2 tsp. vanilla
2 eggs + 1 egg yolk
1 tsp. kosher salt
1/2 tsp. baking soda
2 1/2-2 3/4 c. flour (I think you need more flour in higher altitudes. And less baking soda. So if I were in Cali, I'd probably use 2.25-2.5 c. flour and 1 tsp soda. I'm still getting used to these mountains!)
2+ cups of big fat milk choco chips. But sometimes I love a trio of chocolate: dark, milk, white. And I just realized that ~1 cup of coconut and some slivered almonds would've pushed these cookies in an even more amazing direction. Next hankerin', I guess. Which probably means tomorrow.
I baked these beauties for 10-11 minutes at 325 degrees in my convection oven. If you don't have convection, push it up to 350. They have a perfect crackly outer layer, and a soft and satisfying center. I better go to the gym tonite for sure!

um, will you make me some this summer? they look divine. oh, and we definitely have were having the same hankerin' yesterday; i, too, made a huge batch of cookies (oatmeal raisin) and then proceeded to inhale a dozen of them. and, this after watching Oprah's "Women, Food, and God" episode.
That's funny....I just made the worst batch of choco chip cookies ever. not fair! (normally I have the best, but I used margarine cause I was out of butter. yuck!)
I'll have to try your recipe.
I love tasted and approved recipes from you . . . means they are over the top awesome. maybe some of your cooking creativity will rub off on me this summer :)
